This dish is for 10 people
Mix the tomatoes with the sugar and put them through a fine sieve. Add some Tabasco and finely chopped basil to taste. Turn the mixture in an ice cream maker into a smooth sorbet. Due to the small amount of sugar, this cannot be kept in the freezer for long. Serve a few small balls in a gin glass, sprinkle with shrimp and decorate as desired (tomato slice, dill sprig, basil leaf, etc).
